Extra virgin olive oil (organic production) is obtained by cold extraction between 22 ° C and 24 ° C. The Picual Variety olives are harvested at their optimum ripeness in the months of October to November. Green and transparent with a high content of natural antioxidants (polyphenols).
The oil presents an intense fruity scent of green olive branch and olive leaf with notes of tomato, artichoke and a light touch of fig leaf. The taste is soft with a medium density and medium bitterness. Nutty aftertaste with a medium persistence and an elegant, bitter finish.
The extra-virgin olive oil produced by Aceites Padilla comes exclusively from the Picual variety which is grown on the Padilla family farm, located on the outskirts of the town of Bailen (Jaén). The climate of the town of Bailen is influenced by the nearby Mountain Range the Sierra Morenas, which rise not far from the farm. The family farm is located on terraced surfaces of low altitudes and gentle slopes between the Rumblar and Guadiel Rivers, tributaries of the right bank of the Guadalquivir River. The farm is embedded in the clay soils that have served as raw materials to the city of Bailen from its beginning.
