Radish and Jicama Salad

Salad
2 bunch or bag of organic radishes- chopped and diced
1 medium  jicama- chopped and diced
2 medium cucumbers deseeded, diced
1 cup chopped cilantro
1 cup chopped parsely

Dressing
1/4 cup Prima Olive's Meyer Lemon Extra Virgin Olive Oil
1/4 cup Prima Olive's Honey Ginger Balsamic Vinegar
1 lemon juiced
2 Tbl soy sauce
1 Shallot chopped
1  2" long fresh ginger, peeled and grated

PREPARATION INSTRUCTIONS

Salad and Dressing can made a day ahead of time.
Prepare all salad ingredients in a large bowl.  Prepare dressing in a small bowl. Combine dressing and salad  just before serving.
