Gus' World Famous Chili


What you will need:

1 package of Gus' Chili seasoning( your choice on how much heat you like)
1 lb round beef( can substitute ground turkey or chicken
1lb round of beef cut up into 1 inch cubes( may substitute chicken) 
1 1/2 Cups celery diced
1 cup finely chopped carrot( this brings a natural sweetness)
1 cup red sweet pepper diced
1 cup green pepper diced
1 1/2 cup onion diced
1 15 oz. tomato  diced
1 15  oz. tomato sauce
1 15 oz can pinto beans(optional) your preference
1 12 oz can of beer( or beef stock)
1 15 oz can chicken stock
Directions: Do not brown meat, but place meat only in a large deep frying pan or pot. Pour chicken stock and beer over meat and simmer for 1 hour. Add onion, celery, and carrots and cook for 15 minutes. Add Gus'  one package of Chili Seasoning. Cook for 15 minutes. Blend well.  Add tomato sauce and diced tomato. cook for one hour. Add liquid if needed. One hour before serving add  beans,red and green peppers(Gus' suggests adding toward the end to maintain the color of the peppers  otherwise they disappear).  Very simple and perfect every time!
